Distilled from molasses at Trinidad Distillers Limited in 2011, this rum underwent a unique aging process: nine years in bourbon casks under tropical conditions, followed by a year in Ferrand casks in France, and a final three-month finish in Sauternes wine casks.
9 Year in Bourbon Casks, 1 year in Ferrand Casks, then 3 months in Sauternes.
Nose: It starts with a very fruity profile of mango, citrus, quince with delicate notes of acacia honey and vanilla.
Palate: Rich and complex, it follows the nose with pineapple and peach, beeswax, toasted almond and butter with hints of ginger and cloves.
