"The 2021 Cabernet Sauvignon Cade Estate combines fruit from the original vineyard and 13th Vineyard. It shows hints of pine and sage on the nose, accenting a base of ripe black cherries, while the full-bodied palate is concentrated. It's rich without being overdone, with a long, velvety finish.

Part of the Gavin Newsom and Gordon Getty hospitality empire known as The Plumpjack Group, Cade began with the 2005 purchase of a Howell Mountain vineyard that was its second leaf at the time. A LEED-certified winery followed, supplemented by another vineyard and winery in 2020. The entire estate now comprises 102 acres of vineyards. Winemaker Danielle Cyrot has been at the helm since 2012.

"One of the big challenges is tannin management—we extract them very early, and yet they're hard to taste when there's still sugar," says Cyrot. "That's where the lab analysis helps."

Cyrot is a proponent of a short cold soak prior to fermentation (about two days) but says the key is being flexible in light of climate variability. "This year, I was afraid we weren't going to reach 23° Brix. Last year, we had some lots at 30."

In 2020, the Glass Fire came within five yards of the winery. Says Cyrot, "I had to get an Ag pass to get past the police to tend my white wine ferments. Firefighters cut a firebreak on the edge of the property."" 93 Points Robert Parker
