Don Nuño is a powerful, expressive Oloroso that melds robust structure with elegant nuance. It offers fully oxidized intensity—dried fruit, nuts, spice—and finishes laser-sharp, making it a showpiece Sherry for sipping or for pairing with bold cheeses and meats.
Don Nuño is part of Lustau’s Solera Familiar line, matured in Jerez de la Frontera under strict oxidative conditions. It is made from 100% Palomino Fino grapes.
Rather than aging under flor (like Fino or Manzanilla), Don Nuño spends its time in a Solera y Criaderas system entirely without flor, exposing the wine to controlled oxidation. The Solera system blends younger and older wines over time, delivering complexity, consistency, and depth.
The barrels used are American oak, deepening the wine’s oxidative character and allowing the influence of wood aging to integrate with the Sherry’s natural evolution. The resulting profile is darker, richer, and spicier than lighter Sherry styles.
Nose: Deep aromas of walnut, toasted almond, hazelnut, and marzipan. Rich dried fig, prune, black tea, dark caramel, and leather lie underneath. There’s also a faint tobacco leaf, cedar, and spice nuance (nutmeg, clove).
Palate: Full-bodied and concentrated. The palate delivers layers of dried fruit—fig, raisin, prune—drenched in walnut oil, dark chocolate, molasses, and espresso roast. The oxidative character brings spicy wood soot, stewed citrus peel, and a penetrating dry backbone.
Finish: Long, persistent, and dry. The finish holds onto nutty flavors, roasted coffee bean bitterness, cinnamon bark, and an echo of saline mineral tension. The dryness is firm but never aggressive—leaving a warm, lingering impression.
