Chablis is one of the most misunderstood appellations in France — a name so widely borrowed by the rest of the world that its specific identity has been obscured. The real thing is produced from 100% Chardonnay grown on the ancient Kimmeridgian limestone soils of northern Burgundy — soils that are literally composed of fossilized oyster shells laid down during the Jurassic period — producing a white wine unlike anything grown elsewhere in France. It is not the tropical, oak-kissed Chardonnay of warmer regions. It is precise, mineral, saline, and citrus-edged — built on the tension between cool-climate acidity and the chalky, marine character of its prehistoric terroir.

The name Coquillage is both a cue and a promise. In French, coquillage means shellfish — a direct reference to the fossilized shells embedded in the Kimmeridgian limestone beneath every vine, and to the saline, oyster-shell minerality those ancient fossils impart to the wines grown above them. It is one of the most appropriate wine names in Burgundy: this is a bottle that tells you exactly what it tastes like before you open it, and then delivers.

Maison Moillard was founded in 1850 in Nuits-Saint-Georges and has been producing wines from across Burgundy for over 170 years. Origins & Craftsmanship

Maison Moillard was established in 1850 in Nuits-Saint-Georges — the heart of the Côte de Nuits in Burgundy — by the Moillard family, who built one of Burgundy's most respected négociant houses over the following century and a half. The maison was acquired in 2008 by Vincent Sauvestre, who also owns the négociant Jean-Baptiste Béjot in Meursault, and continues to produce wines across the full Burgundy hierarchy from village appellations through premier and grand crus.

The Chablis Coquillage sources its fruit from vineyards planted on the distinctive Kimmeridgian limestone soils that are the defining geological characteristic of the Chablis appellation. Kimmeridgian limestone — a specific stratum of Jurassic-age rock dating back approximately 155 million years — is composed largely of compressed fossils of the tiny oyster Exogyra virgula, whose chalky mineral remains are literally dissolved into the soil profile by rain and root action and absorbed by the vine. This marine geological origin is the source of the saline, mineral, almost iodine-edged character that distinguishes authentic Chablis from all other Chardonnay-producing regions.

The 2021 vintage in Chablis was shaped by significant spring frost events — a challenge that reduced yields across the appellation but concentrated flavor in the surviving fruit, producing wines of notable intensity and character. The Coquillage is vinified in stainless steel to preserve the appellation's characteristic freshness and mineral clarity without oak influence, then aged on its fine lees for 8 to 10 months — a period that builds texture, adds a subtle creamy richness, and deepens the wine's mid-palate without compromising the essential freshness and acidity that Chablis demands. Tasting Profile
