Today, Yamazaki Distillery remains one of Japan’s oldest and most respected whisky distilleries. Initially, Taketsura followed Scottish methods and was heavily influenced by Scottish whiskies. However, over time, Japanese distilleries developed their unique style.

Craftsmanship and Techniques

The malted barley is then mashed and distilled twice in the pot stills, leaving behind the chemical substances produced during fermentation, known as congeners, such as tannins. For a single malt, the remaining congeners may be blended with other grain whiskies that have been column-distilled. Like Scotch, Japanese whisky goes through wood aging like American oak, Sherry casks, and Japanese Mizunara. Mizunara oak adds unique notes of citrus, spices, and incense.
